RUFFONI CLASSICI COPPER COOKWARE, These Roasting pans, so delightfully “special” and inspired by the past, are made in copper with 1,5 to 2,5 mm thickness.
Handles made in cast brass or forged iron.

Ingredients
2 cups grated potatoes, about 1 1/2 pounds potatoes
1 medium onion, grated
1/4 cup milk, scalded
1 egg
2 tablespoons all-purpose flour
1 teaspoon salt
dash pepper
1 teaspoon baking powder
parsley
vegetable oil
Preparation:
Combine grated potatoes and onion; place in a strainer to allow liquid to drain off into a bowl. When starch has settled, pour water off and add starch back to potatoes. Pour the hot milk over the potatoes, then add the beaten egg. Sift together flour, seasonings, and baking powder, then blend into the potato mixture. If desired, add chopped parsley.
Heat about 1 to 2 inches of oil in a cast iron pan (you may use a deep fryer for these). Drop potato mixture by tablespoons into the hot fat. Fry until golden brown and drain on paper towels.
Makes 6 pancakes.

Cooking sauces correctly is an art and the correct cookware is vital if you want successful results. And because this is such a specialized field within the cooking industry there are chefs that are dedicated solely to cooking sauces - this is all they do - so this gives you some idea of the importance of creating a good sauce.
The best cookware material for sauces is copper. Copper cookware cooks evenly and reacts quickly to temperature changes. This ensures that when you reduce the temperature on the stovetop or remove the pan from the stove, it will cool down rapidly and ultimately prevent the sauce from overcooking or burning.
The disadvantage of using copper cookware is that it can react with some foods causing some of the copper to leach into the meal. This can easily be avoided by using copper cookware that is lined with stainless steel or other metal.

Personally, I like stainless steel cookware. Mostly because it’s easy to clean, but it does have other great attributes. Stainless steel presents itself as one of the most hygienic surfaces for food. Stainless steel also does not rust or chip or get scratched and can last up to 100 years. Because it’s steel, it’s also recyclable.

One of the biggest problems of being a vegetarian is having to take supplements to compensate for the loss of iron that one would gain from eating beef. If you cook with cast iron cookware, however, then you’re luckier than most.
Studies have shown that the minerals from cast iron cookware will attach themselves to food that is being prepared, therefore, getting the right amount of iron in your diet. By purchasing cast iron cookware, you could have some of the same health benefits as a non-vegetarian, as well as having really great, long-lasting cookware.
